Stroehmann Mixed Berries French Toast

Ingredients
8 slices Stroehmann® White King Bread
6 tbs Unsalted Butter
4 tbs Honey divided
1/2 tsp Kosher Salt
1/4 cup Fresh Blackberries
1/2 cup Fresh Raspberries
1/4 cup Sour Cherries
1/4 cup Granulated Sugar
Vanilla Ice Cream
2 Strawberry Pocky Sticks
Directions
  1. Preheat oven to 325°F.
  2. Stack 8 slices of bread on top of one another.
  3. Use a serrated knife to cut out a cube from center of bread, leaving a ½-inch border around crust and being sure not to cut all the way down to the bottom slice.
  4. Remove the center and cut it into small cubes.
  5. Melt butter and 3 tablespoons of the honey in a nonstick skillet over medium heat, stirring until combined.
  6. Pour mixture into a small bowl and set aside.
  7. Add bread cubes to same skillet with 2 tablespoons of the melted honey mixture.
  8. Sprinkle with salt and cook, stirring and turning often, until golden and crisp on all sides (approximately 3-4 minutes).
  9. Brush interior and exterior of hollowed out bread stack with rest of the melted honey mixture.
  10. Place on a baking sheet, and bake in preheated oven until golden brown, 15-20 minutes.
  11. While bread cooks, combine berries and cherries, sugar and remaining 1 tablespoon of honey in a small saucepan.
  12. Cook over medium heat, stirring often, until sugar dissolves and mixed berries begin to burst (approximately 2-3 minutes).
  13. Place bread stack on a serving plate.
  14. Fill with half the bread cubes. ¼ cup berry mixture, remaining bread cubes and more of the berry mixture.
  15. Top with vanilla ice cream, pocky sticks and a drizzle of honey, and dig in!
